Ingredients

  • a bag of wild rocket, roughly 80g
  • 1/2 cup water
  • 4 tbsp basil seeds (or chia seeds)
  • 1/2 cup mixed seeds (sesame, pumpkin, sunflower, hemp, whole flaxseeds)
  • large pinch salt
  • dry herbs or chilli flakes, as desired

Method

  1. Blend the rocket with the water. Pour into a bowl and fold in the chia. Leave 15–20 minutes to thicken.
  2. Fold in the remaining seeds and the seasoning.
  3. Spread thin on a lined tray. Bake in an oven pre-ehated to 160C for 20 minutes, flip, bake another 15. Watch the crackers so they don't burn as every oven differs!
  4. Cool on a rack, break into clusters, and put straight into a sealed jar while still crisp.

From Katia

I use basil seeds rather than chia. Same idea — a seed that turns to gel in water — but with a little more fibre, and they set in minutes rather than twenty. Chia holds the omega-3 advantage, so use whichever you have. Either way, 30g of these gives around four grams of fibre; a shop-bought cracker gives one or two, which is the whole point of making your own.
